Does the project admin get added as a collaborator on every task in that project? How can I keep this from happening so I’m not inundated with needless notifications?

No, project admins (there may be more than one) aren’t automatically made task collaborators.

When you create a task or are the assignee of a task you’re made a task collaborator.

Also, you may be a task collaborator as the result of a default in a project template, a task template, or by a rule.
