In the My Task screen, for tasks automatically added to the “Recently Assigned” section, do they move to other sections automatically after some period of time? What is the schedule for when tasks move out of Recently Added? Or do I always have to manually move them from Recently Assigned?

They never move unless you have Rules defined (in the Customise menu).
