Hi! I’m manually creating a project template and would like to add project roles instead of specific assignees to the rules, but all I see is the ability to assign the task to a variable assignee. This seems like it should be obvious–is it just a subscription level thing? Please help!

No, it’s not a tier level issue - unfortunately, this is not available, currently.
You can vote on it here though:
In the meantime, you can use a single-select custom field to represent the roles and then write a rule to map those to assignees, or group by the custom field values and multi-select and assign batches quickly.
