Context: I’d like to be able to track due date that we set and the actual completion date of the project.
Is there a way I can update the status as “complete” and it will auto generate the date on a column, next to the due date?

it’s currently not possible to auto generate the completion date on a field once the task is marked complete. However, you can create reports by completion date and due date, you can find some tips in this thread: Dates tracking
