Is there a way to auto-complete tasks so that they no longer show up in “my tasks” when you have marked the project as complete and/or archived the project?

No, there is not. This is to prevent accidental completion of tasks that may not actually be complete. You can use the bulk-edit feature to mass complete those tasks before or after marking the project complete.
