When a team member reads a task, and begins to go about completing it, it would be nice if there was a way to check a box something to the effect of “IP” or “in-progress,” to let other team members know that a person has received and/or begun the task.

Couple of workarounds for this would be to either use a tag or create a progress or workflow custom field

I second @Jason_Woods that a tag or Custom Field was designed for the flexibility to address these types of situations. Just setup a “Process” or “Stage” custom field and you’re good to go.
