I have a question: If we set up a workspace at my firm first, because we don’t have corporate emails for now, could we then move to an organization once we get these emails? But since each user would have a different email address, the accounts would be different, no? Would they lose their old account by signing up to a new email in this organization upgrade?

Sure that works without problems. To convert your workplace into an organization at a later stage works as outlined here: Workspace basics | Product guide • Asana Product Guide
The users won’t use access to their current account, the only thing they will have to do is adding the company email address to their account (in case they have not done so before)
