In our projects we assign sub task to owners, but I don’t see these sub task by assignee when I filter for incomplete task regarding of the due date. How do I create a report or view for each assignee to see their task and sub-task?

Subtasks are not technically members of the project (their parent tasks are) so that’s why they don’t show in the main tasks list, and the filter won’t help.
One approach would be to use the Dashboard tab to create a lollipop chart by Assignee. By default it will show both tasks and subtasks, but you can filter the chart to only show one or the other if you prefer.
Another approach would be to “Add to project” the current project to these subtasks. Then your filter would work. If you don’t want to see them in your main view, you could house them all in a collapsed “Hidden Subtasks” section.
