I am able to apply multiple filters to a project on my desktop, but I cannot do this on the app on my tablet or phone. It doesn’t allow me to pick multiple filters, I can only choose one at a time.

The mobile app does not offer all the features that you have on the desktop or web version. So yes you are right, currently the mobile app does allow some filtering and sorting in projects but not all.
