Why do tasks not show up when I sort by name?

Can you please clarify where you want to sort them? If in a project then here is an explanation: Is it possible to sort tasks in Project by individual? - #2 by Mike_Tammaro and You can now sort and filter on Asana Boards
You can also use advanced search to locate specific tasks.
