I recently encountered an issue and I’m hoping someone here might help me resolve it. First, I accidentally deleted a custom field that contained important data. Is there a way to recover this custom field while retaining all the information that was previously in it?
Secondly, to prevent this from happening again, is it possible to restrict the ability of company members to delete custom fields?

Yes you can. When you edit a custom field you can set access levels here:
