I see what you mean, it’s currently not possible to expand each project field to make the project name more visible. I’ve gone ahead and sent your suggestion to our product team so it can be considered in future updates.
In regards to your second question, this is a very popular request in the forum and we have an existing thread about that topi. I recommend you to upvote here: Allow to automatically add subtasks to project
