I was invited to Asana by a former team member, now they don’t work for me anymore… Does that mean he can see everything I do?
Additionally, I got invited to a new project, which is part of my whole company, but only 1 of 4 parts…
Can I put this project in under my whole ‘mission’?

No, even if they were not removed, they would only be able to see projects and tasks that are public, belong to a team or project they are still a member of, or tasks that are assigned to them or that they are a collaborator on.
If by “mission” you mean your own goal, then yes, you can attach the project to a goal you own and/or add it to your own portfolio(s).
