My organization has 5 different domains, and all of them are connected to my plan, but not everyone in my org must be a member. Some of them I just want as a guest, but their email address have the same domain of others who need to be members. How can I solve it?

I’m afraid you can’t change that.
If you’re on an Enterprise plan, you can make those Members View only and they’ll be free, but unlike a Guest will not be able to edit anything.
The only other option is for those users to login with an email address at any domain other than those five, but that workaround isn’t for employees, it’s more for guests of your organization (partners, for example).
