How do you organize Project sections for Customer Education?

Hello. New to Asana. I manage a Customer Education team in a SaaS company producing different types of learning content. I don’t want to create a separate project for each feature as I would end up with too many projects. Should I have one project with sections for Requests, In Development, etc.? Or should I have separate projects for Requests, In Development, Backlog, etc.? What options have you found work best?
