I’m trying to build an Onboarding template and I’d like the due dates to be set based on X days before the employees start date.
Is it possible for me to set up a template that can do this?

Yes, it is possible. You can create project template. If you set dates in this project (template) and then you will use it (creating project based on this template), Asana will ask you when should new project start setting tasks. It will be set referentially (based on template). You can find more information here:
