What does Asana consider to be “This Week” when using the Quick Filters in a project? Does it mean it’s due on or before Saturday? Sunday? Or does it mean due in the next 7 days?
I guess in cases like this you can run a quick test and find out yourself 
Here is your answer: this is the current week (we are today Wednesday, it pulled from last Monday to Sunday)

I guess it also depends on what you set as the first day of the week.
You can amend this in your settings:
- Open the Asana app on your browser.
- Click on your profile picture
- Go to „My Settings“
- Select „Display“
