In the past, I could create several subtasks by hitting enter after each one, ie. “expiration date” hit enter “120 days before expiration date” hit enter, etc, etc, one after the other. Now when I hit enter, the entire task refreshes, and I have to scroll to find the next subtask I just created. What a time waster, why did you change that? It happened sometime last week.
I am also experiencing this, it is tanking my daily efficiency

I’m not seeing that behavior. It sounds like a glitch or bug to me. I would recommend you try these troubleshooting steps, then if that doesn’t resolve it, create a support ticket: see How to contact our Support Team.
I and others on my team are experiencing this also in the web browser. It is not just pressing enter, it is any new subtask creation - it bounces to the top of the task details pane and shows a loading subtask placeholder for a while, then the subtask appears and you can scroll to it. It is the same if you paste a list in to create subtasks - bounces to the top and shows that placeholder for a while, before the subtask appears and you can scroll back down.
As mentioned, it really tanks productivity - I am choosing to not make subtasks if I can for now and hope bug reports are being submitted and it would be fixed soon.
First noticed on Sunday evening but was still there Monday and today.

Why in the world does the page refresh every time I add a subtask? I also need to click into the text box in order to fill out the subtask title. This wasn’t the case before, and that alone is significantly slowing me down and causing a ton of frustration.
