Our team needs to publish/send weekly updates on projects.
If we use the Status Update feature, is there a way to report on Projects that haven’t had an update in last 7 days?
Open to other solutions as well.

The simplest option is probably to use Portfolios (if you’re on Advanced or Enterprise) because the List view Status column there shows the date of each project in the portfolio.
Another option is Universal Reporting (Starter+) or Portfolio dashboard (Advanced+):
If I recall correctly (if not someone will correct me here!), “recent” may mean 13 weeks in this context. (Doing that from memory.)
