The below limit says “You can create subtasks within subtasks, but you can only have a maximum of 5 levels of subtasks.”

But this forum below shows that you can create much more than 5 subtasks.
I believe there aren’t any limitations on how many tasks or subtasks at any level.
Having said that, if a task has over 20-30 subtasks, you should consider converting it to a project, dependant on the case.
And in most cases, one should avoid going more than one level of subtasks deep, otherwise work will get lost in the ‘quantum realm’.

There’s no mistake in the documentation.
The discrepancy is that the documentation is explaining the number of levels of hierarchy of subtasks, not the count of subtasks at any one of these levels which it doesn’t address (but for all practical purposes is not limited).
