Hey! Is there a way to make it so a task can’t accidentally be marked complete?

You can mark your project as Comment Only and only the assignee would be able to mark the task complete. This will help you to avoid that other members edit or mark complete a task they shouldn’t be working on. Just make sure to give edit access to at least one project member so that member can adjust the project’s permissions at any time. You can find more information in this article.
