We miss the function “Save layout as default” as a setting in the new project templates. E.g., we want to see only the incomplete tasks.
I believe it has been reported elsewhere, and @Marie said she would inform the Product team.

Good to hear that I am not the only one who’s missing it! 
Was looking for it over here, but could not find anything
I just looked at the feedback I shared with our team following the launch of Project Templates V2 and this feedback wasn’t initially included so I have just added it to the list. I’ll keep you posted here as soon as I have some news on this topic!

any news on this… being able to save the layout… I am moving fields leave the layout… come back… and have to repeat… use to be able to ‘save as default’
