I have projects i share with clients. I want to have a custom field for “Est. Hrs” that my client can not see. How can i do this? The clients are outside our organization.

As it stands, there isn’t an option to hide the Custom Fields values to a Guest or a members of the Project.
There is an existing thread in the #productfeedback requesting this functionality: Allow Project Owners to Hide & Make Read-Only Custom Fields - #9 by Mark_Hudson. I would suggest you to upvote it!
A workaround could be to create a Private Project with this Custom Field, create a task to add the Custom Field value and reference the task you are referring to (from the Project shared with your clients). I know it’s not ideal but I hope it can help!
