In the Asana list view, there is a project status box that displays on the right hand column. Where can I find info on how that box is controlled? Is there a way to control when it displays, how long it displays, etc?

The project status box can be super helpful 
The status box will show if the status has recently been set by the project owner or a project member on the Progress tab of the project.
If you click on the Progress tab, you will see the status update box under the project owner, and here you can set the status to green, yellow, or red and then provide a quick free-form update (you can use keyboard shortcuts for quick formatting, such as bullets as well).
