How to add emoji to Custom Fields

I am trying to use emoji for statuses in a project. I saw this article that purports to tell you how to do this, but it was written in 2018 and the directions do not seem to correspond to the actual interface. There is no “Manage Custom Fields” option that I can find. Can someone please guide me?

The user interface has changed. In a project’s list view, choose Customize (right side top) and then Add Custom Field:
