Take the following scenario: I have a project holding all my tasks. these tasks can be categorized as a new feature, a bug to be fixed, deployment, analysis, Research… I’d love to have the ability to create a new task in my project that is categorized as a bug and hence this task will hold some extra custom hidden fields other than the fields added to the whole project… This way, each task will hold its unique features

You basically have two requests then: task template + custom fields separated from the project? For the first one, there are already discussion about this, see Search results for 'task template' - Asana Community Forum
