Do collaborators see updates to subtasks? Or can I automatically assign collaborators who are on a parent task to a subtask?

No they don’t, unless they are explicitly a collaborator on the subtask and the update is one of those which generates a notification (like a Comment added).
I don’t think there’s an automatic way to add parent task collaborators to a subtask. The only thing I could think of is not closely related–it’s this feature as part of the rule action adding subtasks:
