I think using guest accounts might be a good idea if you want to improve transparency/collaboration with your customers. You could add them as collaborator. (to your tasks, not your project to prevent them from seeing other customer’s tasks)

Depending on the extent of your onboarding and your subscription it might be worth making the onboarding a project, and adding those projects to a portfolio (which you can separate between what are your sections now by utilising a custom field)
