Is there a way to see tasks that I am listed as a Collaborator on? (In my current issue I know I am not a member of the project board where said task is located)

Did you try use advanced search for that? Like this:
You can save it and use it every time you need.

Thank you, that worked perfectly and I even sorted it to tasks not assigned to me which really helped filter the list.
