When a task type has only two states (for example, “Doc - Open” and “Doc - Closed”), the Asana mobile app automatically adds an “In Progress” status in the middle that doesn’t exist in the workflow .

This causes confusion for users and creates inconsistency between the web and mobile views.

Definitely sounds like a bug to me; please report it to Asana support. Go to help.asana.com and click Get Support near the top right, then Create case.
