I can’t access the full calendar on my phone and ONLY each individual project calendars - how can I view the global calendar only??

Just to be sure, are you referring to the Team Calendar? As it stands, Team Calendar is not available on mobile yet. There is an existing thread requesting this functionality so if you haven’t yet, I would recommend you to upvote it: Team Calender on the Asana Mobile App
