Custom field removed but still editable?

When I remove a custom field from a project, a pop-up window appears saying that “the field values remain but will not be editable”.

But I just found out that the value can still be changed even after removing the field.
Do I misunderstand the message?

I’ve tried to reproduce this case and I can’t change value on deleted custom fields:

I think I just found the explanation.

My tasks in project A are also subtasks of another project B in which there was this field, that’s why you can still set custom fields inside.
