can I mention someone in a comment in a task (@joe...) so they can just read that, but not have them auto-added as a Collaborator???

It’s currently not possible to @ mention someone in a comment and not have them added as collaborator. You can @ mention them and immediately remove them as collaborators. They will still receive a notification that they were @ mentioned in a comment.
