I have a task that’s gotten big and unwieldy with subtasks and I want to convert it to a project. When I choose the convert to task option, it asks me to choose a blank project or new template and creates a NEW project. Is there a way to convert the task AND the information, attachments, notes, subtask statuses?

It will only create a new project, but after that you could re-home those tasks from the new project to your existing project. By re-home I mean to use the Add to project (Tab+P) (multi-homing) to designate the existing project and then, when you’re sure it’s there, remove from the new project (and maybe eventually delete the new project if you’ve moved all tasks out of it.
You can do the above with multi-selecting tasks, and you can designate a section in the existing project as well.
