We quite often change stakeholders during our project which can last several years, how will the historical records as tasks being assigned to the original owner be handled? Will be transferred all to the new one or will they remain under the original owner’s name?

Can you please clarify what you mean by records?
Everything that is created on asana is logged. You can few for example on a task level, the log of changes is captured. If a task is created by Joe Blogs, you will see that they created the task. later, Joe Blogs hands over the task to Kate Smith. When Kate changes due dates or description, these changes will be affiliated to her name. You will still be able to see that the task was created by Joe Blogs.
