We created some forms and now we are trying to check if there is a way to track any changes made to it after it was submitted. We want people to edit but since others in the project also have access we need to know who is making the edit. Is there a way either to see the original form submitted so we can check any changes made or track change after the form was submitted ?

In the form Settings, if you toggle on “Copy all responses to task description” then you’ll see the original form input there:
If anyone changes it, or changes other metadata in the task, you’ll usually see a “story” (audit trail entry) about who did what when at the bottom of the task detail pane by clicking the “Activity” tab:
