I understand that you can make a task into its own project. When I do this, I see that the initial task is marked as “completed.” Is it possible for the task to remain open and active in a project, while also being its own project? Or, does it have to be one or the other?

Converting a task into a project means that the initial task is no longer actionable, so it is not possible to keep this task in the newly created project. You can re-create the task in the project as a workaround.
