In our content calendar, we have different necessary dates for draft due, publish, and promotion start/finish. It’d be great to be able to toggle separate calendars for draft dates, publish dates, and promotion dates of the same cards.

the dates how are they set? As due dates or custom fields etc?
One option could be multi-homing tasks so you have one project containing all tasks and then a separate project for the categories you want to be able to see calendars separate as well.
Now another option would be adding a single-select custom field with options you need and colour code them. Then in calendar view you can select the custom field and everything will be colour coded, more about this here: Asana calendar view options | Product guide • Asana Product Guide
