Removing User during Maternity Leave to allow cover to use seat

Hi we currently have one of our users leaving on Maternity Leave for 12 months and would like to utilise her seat for her Maternity Cover Position.
In this case our question is that if we remove the user from our Subscription (by placing her in our free users team) will this also delete or cause issues with her private projects, dashboards or workflows when in 12 months we re-instate the user?

In the Admin Console > Members, when you click on the ... on the right and select ‘Remove’, you will be given the following choices:

Here are the relative ‘Learn more’ links for each option:
Pause a member’s license temporarily
Remove a member’s account, although I think this link is more appropriate.

This is a great addition to the product, long overdue, but unfortunately the documentation states:

The ability to pause a member’s license is available for paid organizations, but is not available for paid divisions or workspaces.

So that rules lots of us out from being able to use it. I’d love to know what Asana’s rationale is behind making something like this dependent on type of subscription, it’s very frustrating.
