Hello, If the earliest task in Project Alpha has a due date of May 1st and the last task in Project Alpha has a due date of May 31st, we want the project date (column is called Due Date) to say “May 1 - May 31st”
How can we do this please?

You would need to update the Due date field within your portfolio, manually.
I know this is cumbersome and many customers would expect this to update automatically. That is why I have developed a custom code script with my team of developers which can run on a schedule, e.g. once a day or whatever frequency you like. The code will go through each project, find the earliest and latest task within each project and update the project’s start and end dates accordingly. I have already added this for numerous clients of mine, saving them tons of time each week.
