Running a PRIVATE/confidential Project with only the Company Owners as Project members - how can we limit the drop-down menu of Assignees to ONLY the project meners to prevent from accidental assigning a confidential task to all the Organization members that currently are in the drop=down? This seems like a BIG overlook to not have it already.

As it stands, it is not possible to limit the menu of Assignees to only project members but I completely understand what you are explaining.
There is an existing thread in the #productfeedback category regarding this topic: Assignee field should only show members of a project or team. In case you haven’t yet, I would suggest you to upvote it!
