Welcome, @Rissa_Lane, I’m afraid they can’t be customized. If you’re on Business or Enterprise and have Portfolios, you can create your own custom fields at that level and they can have number of options, colors and wordings of your choice, but it’s not the full Status/Progress feature with the fixed choices, history, etc.; it’s just a single select field.
