I’m looking to create a rule that if a task due date was in the pass then its more to the next day.

I’ve included a screenshot (see below) of what that rule might look like. I also recommend that it adds a comment that the task is overdue and the due date has been reassigned.
I would offer a the suggestion of rather than changing the due date, to change a custom field to Overdue for increased visibility.
