Is there a way to hide the attached projects in PArent Tasks? It’s doable on subtasks but can’t be done the same with the main task.
I think it would help clean out the clutter

No this is not an option on the main (parent) task, however, it is worth mentioning that people who do not have access to the project but do have access to that task will not see the project.
