Form drop down question becomes a field

Not sure if this makes sense but here I go.

Is there a way to convert a custom drop down that i’ve created in my forms to a field? That way for example if one is selected, I can then set a ruling to move it to a specific project?

OR is there a way to link a custom field that I create and then use that in forms?
