The “Set Manually” Due Date option doesn’t work in the Gmail Add-on until another option (eg. “Tomorrow” is selected first.

Just gave your steps another go and was able to reproduce it! I’ve gone ahead and filed a task for our Development Team to investigate! I’ll keep you posted as soon as I have an update!
