I have a number of tasks where someone has deleted connection to a Project (In Add to Projects). The task appears in My Tasks - but there is no history to show the project that it was originally linked to. How can I find this (note - the task is generic across multiple projects so I cannot tell by the task name alone)?

Did you try the Activity tab at the bottom of the task detail pane:
Make sure to expand the “Show n previous updates” link(s).

Thanks for the reply - YES, I have checked All Activity. Nothing showing.
Just to note - this task is created as part of a project template so would not be created manually.
