I probably have the issue once a month where I accidentally hit ctrl+enter and it marks a task as completed and I don’t notice it. This is in the web version of the product. Is there a way to disable this, even if it’s globally for everyone?

The shortcut you are using is indeed the one that marks your tasks complete, and no, there is no way to switch it off.
You can find a full list of keyboard shortcuts here. They can be really handy!
I have not heard about other users complaining about this being a problem, but that is not to say that it didn’t happen.
You can create a post in the product feedback section of the Forum, which will allow other users to upvote your idea.
