Wondering if the ability to set a custom/specific date on goals is in the product roadmap? We want to track weekly goals which have specific dates (Monday, Wednesday, etc.), change weekly and are linked to multiple tasks and/or a milestone. Would there be any other way to track this in Asana? We’re using another tool which gives us the weekly goals per project or per goal owners.

You can set a custom date for the Goal itself.
If you are looking to track something and its progress more frequently, why use goals when you can utilise milestones and have then tracked under a particular portfolio?
