A typical project for us will include 5-6 checkpoints with clients in which we ask them to sign off on progress. We typically handle this either informally through email, or formally with Docusign. Is there a way to keep our project progress documented in Asana with these checkpoints and send a summary to a client for their approval?

I recommend setting up a pipeline project in Asana:
Then you can set up sections/columns for all the steps involved and a final approval
You can also work with custom fields and rules. For example if a specific step is done the relevant custom field is updated and a rule pushes the task to the next column and triggers the next action.
